How to make it:

First, weigh out the fours and sieve them together onto your wooden or work surface. If you’re working on a wooden board, be sure to put a towel down or something so the board has some grip. Make a

well and start adding water into the well and mix with your fingers until a dough forms. Continue to add water until a smooth dough ball forms and then place in an air tight space (such as in a bag or under a bowl) to rest for at least 30 minutes.

Grab all the ingredients for your pesto and weigh them out. The easiest way to make it is to throw all the ingredients into a food processor and blitz until smooth-ish. You can also pound all the ingredients into a paste

in a mortar and then add the ricotta.

Once the pasta has gotten a chance to rest, roll it out and cut into long strips. I use a rolling pin and a knife to cut my pasta, but you can use a pasta maker if you wish. This dough will work for any shape pasta you want to make. Once the pasta is cut, hang it to dry a bit. If you’re smart, you would have made the pasta in the morning so it gets to dry before dinner.

When you are ready to make the pasta, bring a pot of water to boil and then salt the water. Ideally you want about a 4-1 ratio of water to pasta. Use lots of salt in the water, it should be salty like the ocean. Add the pasta in the water and let cook until done. When the pasta is fresh this only takes a couple minutes, when dry this can take around 5 to 10 minutes.

Pull the pasta out of the water and place it in a big mixing bowl and add the pesto and a small amount of pasta water. Toss the pasta until it is well coated, plate and enjoy.
